Every good BBQ and potluck needs a delicious coleslaw. Make this red cabbage version with lime juice, cilantro, and homemade dressing in under 10 minutes; it's light, creamy, and flavorful!

Ingredients
- 5 cups red cabbage shredded, 1 small head
- ½ teaspoon kosher salt
- ½ cup shredded carrots
- ¼ cup cilantro chopped
- ½ cup mayonnaise
- 2-3 Tablespoons fresh lime juice ~2 small limes
- ¼ teaspoon garlic powder
- ¼ teaspoon ground mustard
- ¼ teaspoon celery seed
- 2 teaspoons sugar or honey optional
Instructions
- Optional: In a large bowl, massage the salt into the cabbage for several minutes to tenderize it. This makes it softer if you prefer less crunch in your cabbage.
- In the same large bowl, add the (massaged) shredded cabbage, shredded carrots, and cilantro.
- To make the dressing, whisk together in a small bowl the mayonnaise, lime juice, garlic powder, ground mustard, celery seed, and sugar (if using). Add additional lime juice if you prefer a thinner dressing.
- Toss with the shredded veggies. If you did not massage the cabbage, you will want to add salt to the dressing, to taste. Be sure to taste test and adjust any additional ingredients as needed. Store any leftovers in an airtight container in the fridge for up to 2-3 days.
