Giant Cookie
Description
This Giant Cookie combines softened salted butter, both granulated and brown sugars, and an egg with vanilla for a smooth, flavorful dough. It includes all-purpose flour tempered with cornstarch for tender crumb, baking soda for leavening, and a pinch of salt. Half of the semisweet chocolate chips are stirred into the dough, while the rest are sprinkled on top, pressed gently before baking to create pockets of melted chocolate throughout the cookie.
Baked at 350°F until golden brown, the cookie yields a dense yet chewy texture. After cooling thoroughly, chocolate buttercream frosting is piped around the edges, adding a creamy finish and balance to the sweet cookie base.
This large-format cookie suits occasions where individual cookies might be impractical, and the pan shape makes portioning easy. Cooking time can vary depending on pan size; smaller pans require slightly longer baking to cook through.
Ingredients
- 1/2 cup butter softened, salted
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg large
- 1/2 teaspoon vanilla
- 1 1/2 cups all-purpose flour
- 2 teaspoons cornstarch
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup semisweet chocolate chips divided
- 1/2 chocolate buttercream frosting batch
Instructions
- Preheat oven to 350°F. Spray pan with cooking spray or line with parchment paper cut into the shape of the pan if using a giant cookie pan.
- In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy, about 2 minutes.
- Add egg and vanilla and mix well.
- Add flour, cornstarch, baking soda, and salt and mix well.
- Stir in 1/2 cup of the chocolate chips and spread cookie dough into prepared pan. Sprinkle the remaining 1/4 cup of chocolate chips over the top and press gently into the cookie dough.
- Bake for 14-16 minutes until golden brown. Cool completely.
- Make chocolate buttercream frosting. Pipe swirls of frosting around the border, then cut and serve.
Notes
- Baking in an 8-inch or 9-inch pan increases baking time by 5-8 minutes for even cooking.
