An easy, refreshing Gin and Blood Orange Mimosa. This brunch mimosa has just the right amount of sweetness and booze, and tastes floral, citrusy and earthy.

Ingredients
- 4 fl oz vanilla blood orange syrup
- 2 fl oz gin
- 1/4 wedge of lime cut in half
- 2 - 3 Ice cubes
- Prosecco to top up

Instructions
- Place the lime in a glass and muddle to release the juices.
- Add the blood orange syrup and gin. Add the ice and shake/stir for a few seconds to chill.
- Strain into a champagne flute and top up with chilled prosecco. Garnish with sliced blood oranges.
