Raspberry Mimosa Recipe

This raspberry mimosa with fresh berries and orange juice will brighten up any special occasion. With a touch of honey, it's naturally sweet and easy to make in just 15 minutes!

Ingredients
- 2 cups raspberries
- 1 cup orange juice
- ¼ cup honey see notes
- 1 bottle sparkling wine
Instructions
- Place the raspberries, orange juice, and (if using) honey into your blender and blend on medium speed until the raspberries have broken down.
- Strain the juice through a fine-mesh sieve, pressing on the pulp to squeeze out the juice.
- Add ¼ cup of the raspberry juice to a flute glass then carefully fill the glass with sparkling wine. It will foam a lot so go slowly and pour against the side of the glass. Add a few raspberries to the glass to garnish.
Notes
- If you know that you like sweeter drinks, add honey. If you prefer a drier cocktail, leave it out.
- This recipe makes 2 cups of raspberry juice which is enough to make 8 mimosas.
- Depending on the size of your flute glasses you may need more than one bottle of sparkling wine.
- If you'd like to sugar the rim of your flute glass, dip it in water and then in sugar.
