Ginger Bars

Ginger Bars are a richly spiced dessert bar featuring a mix of brown sugar, molasses, and ground ginger which lends a warm, deep flavor. The batter combines both all-purpose and whole wheat flours for texture and wholesome notes. Baking in a sheet pan produces tender, dense bars with a slightly caramelized top enhanced by coarse sanding sugar for subtle crunch.

Description

These Ginger Bars begin by creaming softened butter with packed brown sugar until smooth, then incorporating molasses, eggs, and vanilla to build rich flavor and moisture. The dry ingredients include a blend of all-purpose and whole wheat flour, ground ginger, baking powder, baking soda, and salt for leavening and spice balance. After gently mixing the dry and wet ingredients, the batter is spread evenly in a 9x13 pan and sprinkled with coarse sanding sugar that adds texture during baking. The bars bake at 350°F for about 35 minutes until set and lightly golden.

Once cooled completely, the bars cut easily into squares and offer a chewy interior complemented by the warm heat of ginger and sweet molasses notes. These bars can be served as a snack, dessert, or paired with tea or coffee.
