Description
These Ginger Bars begin by creaming softened butter with packed brown sugar until smooth, then incorporating molasses, eggs, and vanilla to build rich flavor and moisture. The dry ingredients include a blend of all-purpose and whole wheat flour, ground ginger, baking powder, baking soda, and salt for leavening and spice balance. After gently mixing the dry and wet ingredients, the batter is spread evenly in a 9x13 pan and sprinkled with coarse sanding sugar that adds texture during baking. The bars bake at 350°F for about 35 minutes until set and lightly golden.
Once cooled completely, the bars cut easily into squares and offer a chewy interior complemented by the warm heat of ginger and sweet molasses notes. These bars can be served as a snack, dessert, or paired with tea or coffee.
Ingredients
- 2/3 cup butter softened, unsalted
- 1 3/4 cups brown sugar , packed
- 1/4 cup molasses
- 2 large egg
- 2 teaspoons vanilla extract
- 1 cup flour
- 1 cup whole wheat flour
- 1 tablespoon ground ginger
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon salt
- 2 tablespoons sanding sugar coarse
Instructions
- Preheat oven to 350 degrees. Spray a 9x13 pan with baking spray.
- To your stand mixer add the butter and brown sugar on medium speed for 1 minute, until creamed together.
- Add in the molasses, eggs and vanilla until well combined.
- Sift together the flour, whole wheat flour, ginger, baking soda, baking powder and salt.
- Lower the speed on the stand mixer to the lowest setting and add in the dry ingredients until just combined.
- Spread batter in to your baking pan evenly and sprinkle with sanding sugar.
- Bake for 35 minutes, let cool completely before cutting into squares.
