Description
This recipe begins by rubbing chicken drumsticks with fresh ginger and garlic, infusing them with pungent, fragrant flavors. The marinade including soy sauce, oyster sauce, honey, sesame oil, and Chinese five-spice powder adds depth, sweetness, and savoriness. White pepper and salt round out the seasoning.
After marinating at least 30 minutes, the chicken is baked at 375°F until the skin develops a golden-brown, slightly charred finish, indicating caramelized marinade sugars and crispy skin. The inside cooks fully while retaining moisture.
The chicken is best served warm. If the ginger and garlic bits on the surface burn and become bitter, they can be scraped off before eating. Covering the chicken with foil partway through baking helps prevent excessive darkening while allowing thorough cooking.
Ingredients
- 1 1/2 lbs (750g) chicken drumstick
- 1 piece ginger peeled and chopped, 2-inch/5cm

Instructions
- Rinse the chicken and pat it dry with paper towels. Add the ginger and garlic to the chicken and gently rub them in. Then, add the remaining ingredients and stir to mix well, ensuring the chicken drumsticks are evenly coated.
- Set aside to marinate for at least 30 minutes, or up to 2 hours in the fridge for the best results.
- Preheat the oven to 375°F (190°C). Arrange the chicken on a baking sheet lined with parchment paper and bake for 30-40 minutes in the middle of the oven, or until the surface is golden brown and slightly charred, and the inside is cooked through. Serve warm.
Notes
- If the ginger and garlic burn on the chicken surface, scrape them off before serving to avoid bitterness.
