Ingredients

  • 3/4 C butter softened, unsalted, sweet cream
  • 1 C light brown sugar
  • 1/4 C molasses
  • 1 egg large
  • 2 C flour
  • 1 tsp ground ginger
  • 1/2 tsp kosher salt
  • 1 tsp cloves ground
  • 2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 C sugar

Instructions

  1. Using a standing mixer, beat together the butter and sugar until light and creamy
  2. Add the egg and molasses and continue beating until well combined
  3. Using a large bowl, whisk together the flour, salt, cinnamon, cloves, ginger and baking soda
  4. Gradually beat until combined the dry ingredients into the wet
  5. Cover dough with plastic wrap and place into the fridge overnight
  6. Preheat oven to 350 degrees and line cookie sheet with parchment paper
  7. Using a small ice cream scooper, scoop out some dough and roll into a ball
  8. Pour the 1 C of sugar into a bowl
  9. Roll the cookie dough into the sugar
  10. Place cookie dough ball onto the cookie sheet
  11. Repeat step for the remaining cookie dough
  12. Bake in the oven for 10-12 minutes
