Ginger Molasses Cookies Recipe

Ginger Molasses Cookies combine warming spices like ginger, cloves, and cinnamon with molasses and sugar for a soft yet structured cookie. Chilling the dough before rolling and baking helps develop firm texture and deep flavors. Rolling the dough balls in sugar adds a crispy, sweet crust that complements the spiced, moist interior. These cookies are ideal for enjoying a classic holiday or cold-weather taste.

Description

The cookie dough is made by creaming solid shortening with sugar, then incorporating sifted all-purpose flour, baking soda, salt, and ground spices including ginger, cloves, and cinnamon. Molasses and a large egg add moisture and a rich, dark sweetness. After mixing thoroughly, the dough is shaped into a log, chilled to firm up, then cut and rolled into balls for portioning.

Rolling these dough balls in extra sugar before baking creates a lightly crunchy exterior that contrasts with the soft and chewy cookie center. Baking at 350°F for about 11-13 minutes until set ensures the cookies hold their shape but remain moist. Cooling completely before eating lets the flavors meld and texture stabilize.

The combination of spices and molasses defines the cookie’s signature flavor, evoking warmth and depth with a balance of sweetness and spice. This recipe allows using a non-gluten-free or gluten-free flour without altering quantities.

Ingredients

Servings
  • ¾ cup shortening Crisco, solid
  • 2 cup sugar plus extra ½ cup to roll cookies
  • 2 cup all-purpose flour sifted (if desired, use a NON GF flour -- same amount, gluten-free
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon cloves ground
  • 1 teaspoon ground cinnamon
  • ¼ cup molasses
  • 1 egg room temp, large

Instructions

  1. Preheat oven to 350° F. Line a baking sheet with parchment paper and reserve.
  2. Cream shortening with sugar in the bowl of an electric mixer at low speed until homogeneous. Sift flour into the bowl and add baking soda, salt, and spices. Mix in until combined. Whisk in molasses and the egg until combined.
  3. Transfer the dough to a surface lined with plastic wrap and form a log. Wrap and place to rest in the fridge for 2 hours, or overnight. Using a tablespoon as measurement, roll dough into balls and then in sugar.  Place onto the lined sheet, leaving about 2 inches apart between them.
  4. Bake for about 11-13 minutes or until set. Transfer pan to a rack and let Ginger Molasses Cookies cool completely. Enjoy!
