Description
These Gingerbread Cookie Bars use a spiced flour blend featuring ginger, cloves, nutmeg, and cinnamon combined with molasses and both brown and white sugars to create a moist, flavorful dough. The butter is melted and mixed with sugars and molasses, then combined with the dry ingredients before folding in M&M’s candies gently by hand, ensuring they remain intact without being crushed.
Pressed evenly into a 9x13 inch pan, the dough bakes for 20 minutes. Once cooled, it is sliced into bars. This yields a soft yet sturdy texture typical of gingerbread, accented by the colorful candy pieces that add a sweet crunch. These bars are ideal for holiday gatherings or as a sweet snack.
The bars should be allowed to cool completely before cutting to maintain clean edges. Using a spatula to press the stiff dough evenly helps achieve an even bake.
Ingredients
- 1/2 cup butter
- 3/4 cup white sugar
- 1/4 cup brown sugar
- 1/2 teaspoon vanilla
- 1/3 cup molasses
- 1 egg
- 2 cup flour
- 1/2 teaspoon ginger
- 1/4 teaspoon cloves ground
- 1/4 teaspoon nutmeg
- 1 teaspoon cinnamon
- 2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup M&M’s candy
Instructions
- Preheat the oven to 350 F.
- Melt the butter in the microwave.
- Combine the butter with both sugars, vanilla, molasses and egg and beat with a mixer until well combined.
- In a separate bowl combine the flour, ginger, cloves, nutmeg, cinnamon, baking soda and salt.
- Add the flour mixture to the butter mixture and mix until flour is combined.
- Stir in the M&M’s, preferably by hand. Make sure they are well distributed, but don't over mix or they might get crushed.
- Spray a 9 x 13 inch pan with cooking spray and press the batter evenly into the pan with a spatula. The dough will be stiff and not pourable. Add a few more M&Ms on top of the batter if desired.
- Bake for 20 minutes.
- Cut into squares after the bars have cooled completely.
