Gingerbread Thumbprint Cookies

Gingerbread Thumbprint Cookies are a perfect combination of two of my favorite holiday treats. A classic gingerbread cookie with this white and milk chocolate kiss in the top is great for cookie swaps!

Ingredients

Servings
  • 3/4 C butter softened, unsalted, sweet cream
  • 3/4 C light brown sugar packed
  • 1/2 C molasses
  • 1 large egg
  • 3 C flour
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp allspice
  • 1/2 tsp kosher salt
  • 1 tsp baking soda
  • 1 tsp vanilla extract pure
  • 24 milk chocolate melting wafers Ghirardelli brand
  • 1 container white sanding sugar

Instructions

  1. Preheat oven to 350 degrees and line two baking sheets with parchment paper
  2. Using a medium bowl, whisk together the flour, ginger, cinnamon, nutmeg, all spice, kosher salt and baking soda until combined
  3. Using a stand mixer, beat together the butter and brown sugar until combined and fluffy
  4. Beat in the molasses until combined
  5. Beat in the egg and vanilla until combined
  6. Gradually beat in the dry ingredients until a dough forms
  7. Pour the white sanding sugar into a small bowl
  8. Using a mini ice cream scooper, scoop some dough out and roll into a ball
  9. Roll the dough into the white sanding sugar
  10. Repeat the steps until all balls are formed and coated
  11. Place the cookie dough balls onto the prepared baking sheets
  12. Using the back of a teaspoon or small spoon make an indent into the cookie dough balls
  13. Bake in the oven for 8-10 minutes
  14. Remove from oven and allow to cool for a few minutes
  15. Place a Ghirardelli milk chocolate wafer into the indent of the cookies
  16. Allow the cookies to cool for another 30 minutes before enjoying!
