Ingredients
Waffles:
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon ginger
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cloves
- 1/4 teaspoon salt
- 2 eggs, slightly beaten
- 1 3/4 cup milk
- 1/2 cup melted butter
- 2 tablespoons molasses
- 1 teaspoon vanilla extract
Lemon Sauce:
- 3/4 cup sugar
- 2 tablespoons cornstarch
- 3 tablespoons lemon juice
- 2 egg yolks
- 3/4 cup water
- 1 teaspoon lemon extract
Instructions
- In a bowl, stir together the flour, sugar, baking powder, ginger, cinnamon, cloves and salt. Make a well in the center of the mixture.
- In another bowl, combine the eggs, milk, melted butter, molasses and vanilla.
- Add the egg mixture to the flour mixture. Stir just until moistened. Some lumps are ok.
- Preheat a waffle iron and spray with nonstick cooking spray. Cook the batter according to the waffle maker instructions.
- To make the lemon sauce, combine the sugar and the cornstarch in a medium saucepan. Whisk to combine. Stir in the lemon juice, egg yolks, and water. Cook over medium heat, stirring often, until thickened.
- Remove from the heat and stir in the lemon extract.
- Serve the lemon sauce over the waffles.
