Waffles:

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/4 teaspoon salt
  • 2 eggs, slightly beaten
  • 1 3/4 cup milk
  • 1/2 cup melted butter
  • 2 tablespoons molasses
  • 1 teaspoon vanilla extract

Lemon Sauce:

  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 3 tablespoons lemon juice
  • 2 egg yolks
  • 3/4 cup water
  • 1 teaspoon lemon extract

Instructions

  1. In a bowl, stir together the flour, sugar, baking powder, ginger, cinnamon, cloves and salt. Make a well in the center of the mixture.
  2. In another bowl, combine the eggs, milk, melted butter, molasses and vanilla.
  3. Add the egg mixture to the flour mixture. Stir just until moistened. Some lumps are ok.
  4. Preheat a waffle iron and spray with nonstick cooking spray. Cook the batter according to the waffle maker instructions.
  5. To make the lemon sauce, combine the sugar and the cornstarch in a medium saucepan. Whisk to combine. Stir in the lemon juice, egg yolks, and water. Cook over medium heat, stirring often, until thickened.
  6. Remove from the heat and stir in the lemon extract.
  7. Serve the lemon sauce over the waffles.
