Cinnamon Apple Cake:

  • ½ cup vegetable oil
  • ½ cup sour cream
  • 2 large egg
  • 1 tsp vanilla extract
  • cups flour
  • ¾ cup white sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • salt pinch
  • 1 cup red apple 1 large or 2 small, peeled and diced

Cinnamon Topping:

  • ¼ cup white sugar
  • 1 tbsp unsalted butter melted, cooled
  • 1 tsp cinnamon

Glaze:

  • ¼ cup powdered sugar
  • 2-3 tsp milk to taste, depending on desired thickness

Instructions

  1. Preheat the oven to 350 degrees. Coat a 9-inch round cake pan with cooking spray. 
  2. Make the cake by combining the oil, sour cream, eggs, and vanilla in a small bowl; whisk until combined.
  3. In a separate bowl, combine the flour, sugar, baking powder, cinnamon, baking soda, and salt together until well combined. Add the apples and mix until evenly coated. 
  4. Gradually add the wet ingredients to the dry ingredients until just combined. Pour batter into the prepared cake tin and spread out evenly with a rubber spatula. The batter will be very thick.
  5. Make the cinnamon topping by combining the cooled melted butter with the sugar and cinnamon until well combined. Sprinkle evenly over the top of the cake.
  6. Bake the cake for 30-35 minutes, making sure to turn halfway through baking, until a tester inserted in the center comes out clean. Transfer to a wire rack to cool.
  7. Make the glaze by combining the powdered sugar and milk together until creamy, smooth, and your desired thickness. 
  8. Drizzle the glaze over the cooled cake. Slice and serve with ice-cold milk. Enjoy!
