Ingredients

The Bread

  • 4 bananas, very ripe, mashed
  • 1 cup sugar
  • ¼ cup butter, melted
  • 1 ½ cups all-purpose flour
  • 1 large egg
  • ½ cup cocoa powder
  • 1 teaspoon baking soda
  • 1 tblsp vanilla extract
  • ¼ teaspoon salt
  • 1 cup semi-sweet chocolate, chopped or chocolate chips or 8 oz

The Glaze

  • 1 ¼ cup icing or powdered sugar
  • 3 tblsp milk
  • ½ teaspoon vanilla extract
  • 3 tblsp cocoa powder
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350 degrees. Prepare a loaf pan with cooking spray. Set aside.
  2. In large bowl combine flour, sugar, cocoa powder, baking soda, salt and chopped chocolate or chocolate chips.
  3. In another bowl, mash the ripe bananas with a fork until smooth.
  4. Add the melted butter, vanilla and egg and combine with mashed bananas.
  5. Pour over flour mixture and stir just until blended.
  6. Bake for 50 to 70 minutes, until toothpick inserted in center comes out clean.
  7. Let cool in pan on rack for at least 10 minutes. Remove pan and place bread directly onto rack until cool.
  8. Make the glaze: Whisk the icing sugar, cocoa powder, milk, vanilla and salt in a bowl. Pour over the completely cooled banana bread and let set, about 15 minutes. Slice and serve.
