Ingredients
The Bread
- 4 bananas, very ripe, mashed
- 1 cup sugar
- ¼ cup butter, melted
- 1 ½ cups all-purpose flour
- 1 large egg
- ½ cup cocoa powder
- 1 teaspoon baking soda
- 1 tblsp vanilla extract
- ¼ teaspoon salt
- 1 cup semi-sweet chocolate, chopped or chocolate chips or 8 oz
The Glaze
- 1 ¼ cup icing or powdered sugar
- 3 tblsp milk
- ½ teaspoon vanilla extract
- 3 tblsp cocoa powder
- ¼ teaspoon salt

Instructions
- Preheat your oven to 350 degrees. Prepare a loaf pan with cooking spray. Set aside.
- In large bowl combine flour, sugar, cocoa powder, baking soda, salt and chopped chocolate or chocolate chips.
- In another bowl, mash the ripe bananas with a fork until smooth.
- Add the melted butter, vanilla and egg and combine with mashed bananas.
- Pour over flour mixture and stir just until blended.
- Bake for 50 to 70 minutes, until toothpick inserted in center comes out clean.
- Let cool in pan on rack for at least 10 minutes. Remove pan and place bread directly onto rack until cool.
- Make the glaze: Whisk the icing sugar, cocoa powder, milk, vanilla and salt in a bowl. Pour over the completely cooled banana bread and let set, about 15 minutes. Slice and serve.
