Ingredients

  • 3/4 cup butter room temperature
  • 3/4 cups brown sugar
  • 1 egg
  • 1/4 cup milk
  • 3/4 cup molasses fancy
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 Tablespoon cinnamon
  • 1 teaspoon ginger or more to taste
  • 1/2 teaspoon salt

For the Glaze:

  • 1 cup powdered sugar
  • 1-2 Tablespoons water warm
  • 1 Tablespoon butter melted
  • 1 teaspoon vanilla extract optional

Instructions

  1. Use a stand mixer or electric hand mixer to cream together butter and brown sugar for about 2 minutes.
  2. Beat in the egg and milk. Add the molasses and mix until well combined.
  3. In a separate mixing bowl, stir together the flour, baking soda, cinnamon, ginger, and salt.
  4. Slowly add the dry ingredients to the bowl of wet ingredients, mixing until there are no dry spots left.
  5. Cover with plastic wrap and place dough in the fridge for at least 1 hour. (You can leave overnight if needed).
  6. Preheat oven to 350°F and line two baking trays with parchment paper or silicone baking mats.
  7. Roll out the cookie dough to 1/2" thickness and cut out cookies.
  8. Place the cookies onto your prepared cookie sheets and bake for 8-10 minutes, or until browned.
  9. Allow to cool for 2 minutes on baking sheets, then transfer to a cooling rack.
  10. When cookies are cooled, prepare the glaze by whisking together all of the glaze ingredients in a bowl until there are no lumps.
  11. Dip each cookie into the glaze and allow the excess glaze to run off back into the bowl.
  12. Place the cookies back on the cooling rack or cookie sheet and allow to dry for 1-2 hours before serving or storing.
