Gluten Free Apple Fritters
Description
The fritters begin by combining dry ingredients: vanilla whey and casein protein powders, oat flour, tapioca flour or cornstarch, baking powder, cinnamon, and brown sugar. Butter is cut in and worked into the flour mixture to add moisture and richness. Chopped apple and Greek yogurt moisten the dough, integrating fresh fruit for natural sweetness and moisture.
The dough is divided onto parchment paper shaped into rectangular fritters and air fried at 325°F. Spraying the tops with oil helps develop a golden crust while the air fryer cooks the fritters evenly, with a flipping step midway to brown both sides. The resulting fritters have a moist and tender crumb with apple pieces embedded, and a mild vanilla cinnamon flavor from the protein powders and spices.

Ingredients
For the Fritter
- 2 tbsp whey protein powder vanilla
- 2 tbsp casein protein powder vanilla
- 3 tbsp oat flour
- 1 tbsp tapioca flour or cornstarch
- ¼ tsp baking powder
- ½ medium apple
- 1 tbsp butter
- ¼ cup Greek yogurt plain, nonfat
- 1 tsp cinnamon
- 1 tbsp brown sugar
For the Frosting
- 3 tbsp powdered sugar
- 1 tsp milk
Instructions
For the Fritter
- NOTE: If you have the pancake mix from the protein pancakes premade (which you should 😎) you can measure out 50g of it and use it here.
- Mix all of the dry ingredients for the fritter together so no clumps remain.
- Cut the butter into small pieces and press it into the flour mixture with a fork until it is incorporated.
- Add in the apple and Greek yogurt and mix until completely hydrated.
- Cut out two rectangular pieces of parchment paper about 5 inches by 3 inches. Spray lightly with oil.
- Divide the dough into two halves and spread out on each piece of parchment.
- Preheat your air fryer to 325°F on the air fry setting for 15 minutes.
- Spray the top of each fritter with oil and add to the air fryer. You could probably bake these but I would guess they will come out more bread like if you do. It may take longer in the oven.
- Keep an eye on the fritters and flip them over about half way through or when the top has browned evenly.
For the Frosting
- Mix the powdered sugar and milk together.
- Top each fritter with frosting.
