Gluten Free Dairy Free Banana Bread

This gluten free dairy free banana bread turns out light and loaded with flavor. It makes a delicious breakfast snack or anytime treat.

Ingredients

  • 2- 3 banana 200g, ripe
  • ½ cup almond milk 120ml
  • ¼ cup sugar
  • ¼ cup peanut butter 65g
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 ½ cups gluten free flour 180g
  • ½ cup almond flour 50g
  • 2 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 325F. Line a 4 x 8 inch loaf pan with parchment.
  2. Add the bananas, almond milk, sugar, peanut butter, and vanilla to a bowl and use a stick blender to blend.
  3. In a clean bowl, mix the dry ingredients - gluten free flour, almond flour, baking powder, baking soda and salt.
  4. Add the wet ingredients to the dry and use a spatula to combine.
  5. Pour in the batter to the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 45 - 55 mins until you can insert and remove a skewer without crumbs sticking.
  7. Allow to cool in the pan for 10 minutes then transfer to a cooling rack to cool fully before slicing.

Notes

  • Use room temperature ingredients.
  • Fold the wet and dry ingredients together lightly; don't overmix.
  • Cool the banana bread in the pan for 10 minutes before turning it out.
