Gluten-Free French Toast Casserole

This slow cooker French toast casserole is the perfect way to indulge in your favorite breakfast comfort food without having to put in the work! With a maple cinnamon flavor and packed with protein it’s the best way to kick off the morning.

  • 7 lices gluten-free bread
  • 6 eggs
  • ½ cup maple syrup
  • 1 teaspoon cinnamon
  • ¼ cup collagen powder
  • cup frozen blueberries
  • ½ cup dairy-free milk
  • cup pecans optional

Instructions

  1. In a small bowl, use a handheld electric mixer to beat all the ingredients except for the bread, pecans, and blueberries.
  2. Chop the bread into bread cubes.
  3. Pour the egg mixture over the bread cubes and mix well until it’s all coated.
  4. Line the slow cooker with parchment paper.
  5. Pour the bread mixture into the slow cooker.
  6. Top the mixture with frozen blueberries.
  7. Place a dishtowel over the slow cooker and then the lid. Do not "seal" the lid with clasps.
  8. Cook on low (read about cook times below) for 5 hours.
  9. Thirty minutes before serving, toss the pecans into the slow cooker to heat up (optional!).

  • Cooking Tips:
  • This casserole cooks best for 5 hours on low. If you like your French toast soft and fluffy, cook for 4.5 ish hours. If you prefer it a bit more dense and with some crunch on the outsides, cook for 5.5-6 hours.
  • So far this specific recipe hasn't worked well overnight (cook time 7-8 hours). If you're hellbent on trying it, you'd need to double the batch as is and increase the milk in the recipe.
  • For many crock pot French toast casseroles, you need to leave your bread out and then soak it in the mixture. I find that gluten-free bread is already a little dry so there’s no need to “make it stale”. And because this protein French toast cooks for so long, you don’t need to soak the bread in the mixture.
  • Make sure not to use frozen bread, thaw it first.
  • Gluten-free flours vary from bread to bread, using a different kind may alter the texture of the casserole a bit.
  • Line your slow cooker with parchment paper. Trust me. Otherwise, a lot of the bread sticks to the bottom and not only makes a mess but you lose out on deliciousness!
  • This recipe was made in a 7 quart slow cooker. Cooking times may vary for bigger or smaller.
  • Try to use small frozen blueberries so they disperse best.
  • You cannot substitute brown sugar for maple syrup. The syrup adds more liquid to the French toast casserole recipe.
  • When it’s ready to eat, you can top the slow cooker French toast casserole with drizzled maple syrup, powdered sugar, chocolate chips or fresh fruit!
