Gluten-free Boxty Irish potato pancakes are a healthier take on a traditional Irish recipe. Crispy on the outside and fluffy on the inside, these potato cakes are everything you need to kickstart an Irish-inspired meal.

Ingredients
- 2 potatoes
- 2 tablespoons gluten-free flour or all-purpose flour
- ½ cup milk
- 1 egg
- Butter for frying
- salt and pepper

Instructions
- Boil 1 potato until soft. Mash.
- Grate 1 raw potato. Squeeze out all the liquid. Add to mashed potato mixture and mix.
- Add flour, egg, milk, salt and pepper to the mashed potato and grated potato mixture. Mix into thick batter.
- Melt butter in a non-stick pan or cast-iron griddle over medium heat.
- Scoop batter into pan. Fry until crispy and browned on both sides.
- Repeat with remaining batter.
- Enjoy with sour cream.
