Gluten Free Peach Cobbler with Almond Flour
Description
This peach cobbler begins with a filling of sliced peaches sweetened with sugar, brightened by lemon juice, and thickened slightly with cornstarch to create a juicy, yet stable base once baked. Vanilla extract adds a warm aroma to the fruit mixture, which is evenly spread in a baking pan.
The cobbler topping combines almond flour with sugar, gluten-free baking powder, and salt to create a dry base. Cold butter is then cut into this mixture until crumbly, and eggs are incorporated to bind the dough. Gradual addition of almond milk produces a sticky, spreadable batter that covers the peach layer evenly. Two tablespoons of sugar sprinkled on top enhance browning and add a slight crunch.
Baked at 400°F for approximately 45 minutes, the cobbler emerges with a golden crust and bubbling peach filling, offering contrasting textures of soft fruit and tender almond topping. This recipe provides a gluten-free dessert option with the nutty flavor of almond flour complementing the sweet peaches well.
