Ingredients

  • 1/2 cup pumpkin puree
  • 1 1/2 cup dark brown sugar
  • 1/2 cup canola oil
  • 1/2 cup mayonnaise for lactose free version OR sour cream
  • 5 egg
  • 1 cup tapioca flour
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons vanilla
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon ground ginger

Instructions

  1. Preheat oven to 350°F.
  2. Combine wet ingredients in a large mixing bowl.
  3. In a separate mixing bowl, sift together dry ingredients. Add dry ingredients to bowl with wet ingredients and mix well, using a hand or stand mixer.
  4. Pour into a greased 9" round cake pan and bake at 350°F for 30 minutes.
