Gluten-Free Scalloped Potatoes

Ingredients

  • 2 pounds Yukon gold potatoes peeled and thinly sliced
  • 2 tablespoons unsalted butter
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F. Grease a 9x13-inch baking dish with butter.
  2. In a saucepan, melt butter over medium heat. Add cream, milk, salt, and pepper, whisking until well combined.
  3. Arrange half of the sliced potatoes in the baking dish. Pour half of the cream mixture over the potatoes and sprinkle with 1 cup of cheese.
  4. Repeat with the remaining potatoes, cream mixture, and cheese.
  5. Cover with aluminum foil and bake for 40 minutes. Remove foil and bake for an additional 20 minutes or until the potatoes are tender and the top is golden brown.
