Description

This recipe starts by boiling gnocchi until they float to the surface, indicating they are cooked, followed by tossing them in olive oil to prevent sticking. Separately, butter is melted in a skillet to sauté minced garlic, adding aroma and depth.

The gnocchi get a quick sauté to develop a slight browning on the edges, enhancing texture. A sauce made from fire-roasted crushed tomatoes, tomato sauce, and chicken broth simmers until reduced slightly, then heavy cream, crushed red pepper flakes, salt, and black pepper are added to create a creamy, balanced sauce with a gentle heat.

  • 1 pound gnocchi
  • 2 tablespoons butter
  • 2 teaspoons olive oil
  • 3 teaspoons garlic minced
  • 1 ounce fire roasted crushed tomatoes or diced tomatoes, in a can
  • ½ cup tomato sauce
  • ½ teaspoon italian herb blend or Herbs de Provence, dried
  • ½ cup chicken broth or water
  • cup heavy cream
  • ¼-½ teaspoon red pepper flakes crushed
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste
  • thyme optional, fresh; parmesan grated; for serving

Instructions

cook the gnocchi

  1. Fill a pot with about 3 inches of water. Bring to a boil.
  2. Add gnocchi, boil for 2-3 minutes until gnocchi floats. Drain, then toss gnocchi with 2 teaspoons olive oil to keep it from sticking together.
  3. Melt butter in a large skillet over medium heat. Add garlic and saute 1 minute until fragrant.
  4. Add gnocchi and dried herbs, and saute 2-4 minutes until gnocchi begins browning on the edges.
  5. Transfer gnocchi to a bowl and cover to keep warm.

make the sauce

  1. Add tomatoes, tomato sauce, and broth to the skillet over medium heat and bring to a simmer.
  2. Stir in heavy cream, crushed red pepper flakes, and salt and pepper. Simmer 4-5 minutes until sauce is reduced and creamy.
  3. Stir in gnocchi, taste and add salt and pepper if needed. Garnish with thyme or basil and freshly grated parmesan and serve.

Notes

  • Adding whole garlic cloves provides extra garlic flavor and a decorative touch to the sauce.
  • For a richer sauce, include an additional 1/4 cup of heavy cream when finishing.
