Ingredients
- 2 tbsp. olive oil
- 1 pint grape tomatoes
- 2 garlic minced, cloves
- 1 tsp. balsamic vinegar
- salt to taste
- black pepper to taste
- 4-5 oz. goat cheese plain
- bread baguette or French bread, sliced
Instructions
- Add olive oil and tomatoes to a skillet and sauté over medium heat for about 20-22 minutes, stirring occasionally. When the tomatoes start to pop and break down, add the garlic and balsamic vinegar. Cook for a couple minutes, until the garlic has softened. Season with salt and pepper to taste.
- If using untoasted bread, spread goat cheese on each crostini and top with some of the balsamic tomato mixture. I like to crack some fresh pepper on top. Enjoy!
