Description
The Gochugaru Baked Tofu, Melon, and Pepper Veggie Skewers bring together the spicy, smoky flavor of gochugaru-seasoned tofu with fresh melon and green pepper pieces grilled to tender and slightly charred perfection. Firm tofu is pressed and marinated in a soy sauce-based mix seasoned with garlic powder and gochugaru, ensuring the pepper flakes coat the tofu evenly before grilling.
The skewers are cooked on a grill or skillet grill until the tofu develops grill marks on at least two sides, while the melon and pepper pieces get a light sprinkle of gochugaru and salt enhancing their natural sweetness and crunch. The accompanying sweet chili lime sauce combines rice vinegar, lime juice, maple syrup, gochugaru, and garlic powder to balance heat, sweetness, and acidity as a dipping complement.
These skewers can be served on their own as a spicy appetizer or arranged over salad greens for a light meal component. They balance savory, spicy, fresh, and sweet elements in one dish.
The tofu absorbs the gochugaru marinade well after chilling for 30 minutes, improving flavor. Use extra firm tofu for best texture and maintain even cubing for stable skewers that hold up during grilling.
Ingredients
- 14 oz firm tofu pressed for 10 minutes, then cubed into large cubes, or extra firm tofu
- 1 green pepper or other veggies
- 2 lices of melon of choice
- 1 tbsp soy sauce
- 1/2 tsp garlic powder
- 2 to 3 tsp gochugaru pepper flakes or use other pepper flakes
- salt a good dash
- gochugaru for the sprinkling
- salt for the sprinkling
Sweet Chili Lime dipping Sauce:
- 2 tbsp rice vinegar
- 1 tbsp lime juice
- 2 tbsp maple syrup or more
- 1/2 tsp gochugaru pepper flakes or red pepper flakes
- 1/4 tsp garlic powder , add a clove of garlic minced as well for more flavor
- salt a good pinch
Instructions
- Cube the tofu and veggies into large pieces so that they dont fall off the skewers easily. Mix soy sauce, garlic, pepper flakes and salt in a bowl. Brush the mixture liberally on the tofu cubes and let chill to marinate for half an hour. Brush so that the pepper flakes are spread over all cubes. You can also sprinkle more gochugaru as needed.
- Then Skewer the tofu cubes, melon and peppers onto skewers. Sprinkle more gochugaru/pepper and salt on the melons and peppers.
- Grill on a grill skillet or grill, until tofu has nice grill marks. Turn the skewers around to have grill marks or on atleast 2 sides of the tofu. Serve as is or over salad, with sweet chili sauce.
