Gochujang-Honey Glazed Shrimp Skewers

These shrimp skewers are coated in a glaze combining gochujang, honey, soy sauce, mirin, sesame oil, garlic, ginger, and scallions. The shrimp are threaded onto soaked wooden skewers, grilled briefly over medium heat, and brushed with the spicy-sweet glaze before serving, topped with sesame seeds and scallions for a flavorful bite with a lightly charred finish.

Description

Gochujang-Honey Glazed Shrimp Skewers feature jumbo shrimp marinated and glazed with a mix of Korean chili paste (gochujang), sweet honey, and savory elements like soy sauce and mirin. The addition of fresh garlic and ginger adds pungency and warmth. The skewers are soaked beforehand to prevent burning, and the shrimp are grilled rapidly to a tender, opaque state while absorbing the glaze.

The grilling process imparts a slight char and smokiness that balances the sweet and spicy glaze. Once cooked, sesame seeds and thinly sliced scallions are sprinkled on top for extra texture and flavor.

This dish works well as an appetizer or part of a main meal. Doubling the skewers helps stabilize the shrimp, and careful attention to soaking skewers prevents burning during grilling.
