Description
Golden Fried Rice begins with refrigerated white rice coated evenly in a mixture of egg yolks, salt, Shaoxing wine, white pepper, sesame oil, and optional turmeric to add a warm tone. The rice is stir-fried in a hot wok with vegetable oil until the grains dry out and each is distinct and slightly toasted. Vegetables like choy sum stems provide crunch and contrast, and scallions add a fresh, pungent note at the end.
The stir-fry method creates gentle popping and dryness in the rice rather than a wet or mushy texture. The oil and seasonings enhance the rice without overpowering it, making the dish versatile alongside many Asian-style meals.
Cooking in small batches helps maintain high heat and proper texture. Gluten-free substitutions can be made by selecting gluten-free cooking sherry rather than Shaoxing wine. The dish is best served immediately to preserve its texture and flavor.
Ingredients
- 2 cups white rice refrigerated overnight, cooked
- 4 egg yolk
- 1/2 teaspoon salt or to tatse, sea salt
- 1 teaspoon Shaoxing wine (or dry cooking sherry)
- 1/4 teaspoon white pepper
- 1/2 teaspoon sesame oil
- 1/8 teaspoon Turmeric (optional)
- 3 tablespoons vegetable oil
- 1/2 cup choy sum stems (or asparagus, broccoli stems, gai lan stems, etc.)
- 1 scallion (finely chopped)
Instructions
- In a medium bowl, add the cooked white rice, egg yolks, salt, Shaoxing wine, white pepper, sesame oil, and turmeric (if using). Mix until every grain of rice is well-coated. There should be no lumps or chunks of rice.
- Preheat a wok over high heat until it starts to smoke. Add the oil, and swirl it around the perimeter of the wok.
- Add the rice, and stir-fry continuously for 1-2 minutes. Add the vegetables, and continue stir-frying. Once the rice grains are dry and start to pop around in the wok, taste and add an additional pinch of salt if needed. (A pinch of extra salt really brings out the flavor of this golden fried rice.) Stir in the scallions, and serve immediately.
Notes
- Cook golden fried rice in batches for more even texture and avoid overcrowding the wok.
- Use a gluten-free cooking sherry instead of Shaoxing wine for a gluten-free version.
