Graham Cracker Cookies
Description
The recipe uses graham cracker crumbs combined with flour, baking soda, and salt for the dry mix. Creamed butter and brown sugar provide a rich, caramel-like base, while vanilla and an egg bind the dough. Stirring in chocolate chips adds sweetness and texture contrast.
The dough is scooped onto parchment-lined baking sheets and baked at 350°F for about seven minutes. The cookies appear slightly underbaked when removed but firm up as they cool, resulting in a soft, chewy texture with the distinct graham cracker flavor.
Using graham cracker crumbs rather than pieces ensures even texture throughout. These cookies can be served as a snack or dessert and pair well with milk or tea.
Ingredients
- 1/2 cup butter room temperature
- 1 cup brown sugar
- 2 teaspoons vanilla
- 1 large egg
- 1 1/2 cups graham cracker crumbs
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chocolate chips
Instructions
- Preheat oven to 350 degres.
- In the bowl of a stand mixer, cream together the butter and sugar until creamy.
- Beat in the vanilla and egg until well combined.
- In a medium bowl, combine the graham cracker crumbs, flour, baking soda, and salt. Gradually add to the butter mixture until just combined.
- Stir in the chocolate chips.
- Using a medium cookie scoop, drop balls of dough onto a parchment lined baking sheet. Bake for 7 minutes.
- Cookies will look slightly underdone, but should set up nicely as they cool.
Notes
- Use a food processor to crush whole graham crackers evenly, or substitute with store-bought graham cracker crumbs for convenience.
