Gramma's Easy Berry Cobbler + Video

Gramma's Easy Berry Cobbler features a tender batter poured over fresh berries then baked until golden and bubbly. The topping combines flour, sugar, baking powder, milk, melted butter, and vanilla, providing a soft cake-like crust that contrasts with the juicy berries. The cobbler is finished with lemon zest and a sprinkle of finishing sugar for texture and brightness.

Description

This cobbler recipe uses a simple biscuit-style batter mixed from flour, sugar, baking powder, salt, milk, melted butter, and vanilla extract. Fresh berries, such as blueberries or mixed berries, are scattered in a baking dish with some left for topping. The batter is poured evenly over the berries, and then the remaining berries are added on top with lemon zest and a crunchy finishing sugar sprinkle that adds both texture and a touch of brightness to the sweet dish.

Baking at moderate heat produces a golden-brown crust that surrounds soft, juicy berries, creating a warm, inviting dessert that can be served on its own or topped with ice cream or whipped cream. The lemon zest adds a subtle aroma and flavor lift balancing the sweetness. This cobbler is suitable for celebrations or casual family desserts.

Using fresh berries is preferred; if using frozen, thaw and drain excess liquid to avoid sogginess. Finishing sugar, a coarse crystalline type, provides a pleasant crunch but can be substituted with regular sugar if unavailable.

Ingredients

Servings
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1/2 cup butter melted
  • 1 tsp vanilla extract
  • 3 cups berries (See Note 1)
  • 1 lemon zest only
  • 1/4 cup finishing sugar (See Note 2)

Instructions

  1. Preheat oven to 350°F. Coat a 11x7" pan with cooking spray.
  2. In a mixing bowl add the flour, sugar, baking powder, salt, and milk. Whisk to combine. Add the melted butter and vanilla and whisk until combined and a smooth batter.
  3. Scatter 2 cups of berries on bottom of pan and pour batter evenly over top. Sprinkle remaining cup of berries on top, zest from half the lemon and finishing sugar.
  4. Bake for 40-45 minutes, until golden brown. Serve warm with a scoop of ice cream or whipped cream.

Notes

  • Use fresh berries when possible for best texture and flavor; if using frozen, thaw and drain excess liquid before baking.
  • Finishing sugar adds a crunchy topping, but regular sugar can substitute if finishing sugar is not available.
