Description
Grand Marnier Truffles combine the deep, bittersweet notes of dark chocolate with the citrusy, slightly sweet character of Grand Marnier liqueur. Heating cream to a simmer and then pouring it over the chocolate and liqueur allows the chocolate to melt smoothly, forming a shiny ganache. After chilling for about two hours, the ganache firms enough to be shaped into small spheres, which are then rolled in sifted cocoa powder to add a slightly dry, bitter contrast to the rich interior.
The truffles are refrigerated until serving to keep their shape and texture firm. They offer a nuanced bite, mellow and not overpowering from the liquor, making them suitable for gifting, sharing at gatherings, or enjoying as a refined homemade treat.
Different types of liqueurs can be used for variations, but Grand Marnier provides a classic orange flavor that pairs beautifully with dark chocolate. The truffles keep best refrigerated and should be served chilled to maintain their firm texture without becoming too soft at room temperature.
Ingredients
- 1/2 cup heavy cream
- 12 ounce dark chocolate chips bag, I used Nestle
- 2 Tbsp Grand Marnier
- 1/2 cup cocoa powder unsweetened, for dusting, sifted
Instructions
- Heat the cream until it just comes to a simmer. You can do this on the stove or in the microwave.
- Put the chocolate and Grand Marnier in a mixing bowl and pour the cream over it. Let sit for 5 or 10 minutes. Stir to melt the chocolate, the mixture should be smooth and glossy. If necessary you can microwave for a short burst to completely melt the chocolate.
- Refrigerate the chocolate ganache until it is chilled and scoop-able, about 2 hours.
- I use my smallest 1 inch scoop to portion out the ganache. Roll it into a smooth ball between your hands and then roll it in the cocoa powder. When all the truffles are coated, refrigerate them until serving.
Notes
- The 2 tablespoons of Grand Marnier provide a balanced orange flavor but can be adjusted for stronger or lighter taste.
- Experiment with other liqueurs like Kahlua, Chambord, or Limoncello for different flavor profiles.
- Keep the truffles refrigerated and serve them chilled to maintain firmness and texture.
- Use a small scoop to portion the ganache evenly into truffles for uniform size.
