Grandma Geri's Gingersnaps

Grandma Geri's Gingersnaps are crisp cookies flavored with a blend of ginger, cinnamon, cloves, and a hint of cayenne pepper for warmth. The dough, enriched with cold butter, sugar, eggs, and molasses, is rolled into balls, coated in sugar, then baked until slightly cracked on top, resulting in a crunchy texture with a chewy center. These cookies offer a classic spice profile and are great for holiday baking or anytime a spiced cookie is desired.

Description

This gingersnap recipe combines cold butter and sugar creamed together until pale and fluffy, then eggs and molasses are mixed in, providing moisture and depth of flavor. The dry ingredients include flour, baking soda, baking powder, salt, and a fragrant mix of cinnamon, ginger, cloves, and cayenne pepper for a subtle heat. The dough is handled carefully to avoid over-mixing, preserving the tender texture.

Dough balls are rolled in sugar to create a light crunch on the exterior. Baked at 350 degrees Fahrenheit for 12 to 15 minutes, the cookies develop a light crackled surface while retaining chewiness inside. The molasses contributes to the classic gingersnap flavor and moistness.

Grandma Geri's Gingersnaps make a flavorful treat for those who enjoy spiced cookies with a balanced sweet and spicy profile. They can be served as a snack, with tea or coffee, or used in dessert recipes that call for a spicy cookie base.
