The frosted cakes are tender and moist with a balanced cocoa flavor, complemented by a creamy, lightly sweet filling that holds its shape. These homemade pies combine nostalgic flavors with a unique frosting preparation.

Description

The whoopie pies start with a batter mixing vegetable shortening, sugar, egg, vanilla, and milk, combined with dry ingredients including all-purpose flour, unsweetened cocoa powder, and baking soda. The batter is scooped onto greased baking sheets and baked into soft, round cakes. Parallelly, the Miracle Frosting is prepared by thickening a flour and milk mixture, cooling it, then whipping it with butter, shortening, and sugar until fluffy.

Once cooled, the cakes are sandwiched with the frosting, creating individual pies that are moist and tender with a rich cocoa flavor offset by a sweet and creamy filling. This dessert is best served fresh but can be stored or frozen as noted.

Whoopie Pies

  • 6 tablespoons vegetable shortening brand Crisco
  • 1 cup sugar 200 grams
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup milk 1% or 2%
  • 2 cups all-purpose flour 250 grams
  • 5 tablespoons cocoa powder 30 grams, unsweetened
  • 1 1/4 teaspoon baking soda 7 grams

Miracle Frosting

  • 4 tablespoons flour 31 grams
  • 1 cup milk
  • 1/2 cup butter salted
  • 1 teaspoon vanilla extract
  • 1/2 cup vegetable shortening brand Crisco
  • 1 cup sugar 200 grams

Instructions

  1. Preheat the oven to 400 degrees.  Grease 2 large baking sheets and set aside.

To Make Miracle Frosting

  1. Mix flour and milk together in a medium sauce pan and heat slowly, stirring constantly until it begins to thicken.  Thicken until it's the consistency of heavy cream.
  2. Put immediately in the fridge to cool. 
  3. With a hand mixer, in a large bowl whip butter for 4 minutes.  
  4. Add Crisco and whip for 4 minutes. 
  5. Add sugar and whip for 4 minutes.
  6. Once the flour and mix mixture has cooled, add the Crisco and sugar mixture and and whip it all together for 4 minutes. 

To Make Pies

  1. In a large bowl cream together Crisco and sugar.  Add egg, vanilla, and milk and mix together until well combined.
  2. In a separate medium sized bowl, mix together all the dry ingredients: flour, cocoa powder, baking soda.
  3. Mix dry ingredients into bowl with creamed ingredients. 
  4. Scoop 1/4 cup of batter onto greased baking sheets, leaving plenty of room - 2 -3 inches between each scoop. The batter will spread!
  5. Bake for 8 - 10 minutes.  Then remove from sheet and let cool.  
  6. Assemble the pies by spreading a thick layer of frosting on one pie and then topping with a second.  
  7. Enjoy!!
