Ingredients

  • 1 cup of flour
  • ½ tsp salt
  • ½ tsp baking soda
  • cup of white sugar
  • cup of brown sugar
  • 1 tsp vanilla extract
  • 1 stick of butter
  • 1 egg
  • 1 cup of granola I used vanilla almond granola
  • ½ cup of semi-sweet chocolate chips
  • ½ cup of shredded coconut

Instructions

  1. Preheat the oven to 375 degrees.
  2. Combine the flour, baking soda, and salt in a bowl. Set aside.
  3. Beat the sugars, vanilla, and butter with a hand mixer until creamy and smooth.
  4. Add the egg and mix until well combined.
  5. Slowly add the flour mixture to the sugar mixture until well mixed.
  6. Add the granola, chocolate chips, and coconut and mix until combined.
  7. Scoop spoonfuls of dough onto the baking sheet about 1 inch apart.
  8. Place the baking sheet into the oven and bake for 11-13 minutes.
  9. Remove from the oven and cool on the baking tray for 5 minutes before moving them to the cooling rack.
  10. Serve with ice-cold milk. Enjoy.
