Grass-fed Lamb Meatballs

Grass-fed Lamb Meatballs are seasoned with a blend of spices including garlic powder, cumin, cinnamon, and finely diced onion, baked until just cooked through and tender. They are served in a thyme-infused gravy made with butter, flour, and chicken stock, creating a comforting dish with warm, savory flavors. Placed atop egg noodles, the dish balances rich meatball flavors with a smooth, seasoned gravy and tender pasta.

Description

This recipe begins by mixing finely diced onion with spices such as garlic powder, cumin, cinnamon, and salt, combined thoroughly with ground grass-fed lamb to form a well-seasoned meatball mixture. The meat is shaped into small, tablespoon-sized meatballs spaced evenly on a baking sheet and baked at 350°F until cooked through, retaining tenderness.

While the meatballs bake, a gravy is prepared by melting unsalted butter in a saucepan, whisking in flour and thyme to form a roux, then slowly adding chicken stock to create a smooth sauce. The gravy is simmered until it thickens sufficiently to coat the back of a spoon, seasoned with salt and pepper to taste.

The baked lamb meatballs are then combined with the gravy, allowing the flavors to meld. The mixture is served over cooked egg noodles, garnished with additional minced thyme. This meal features tender, flavorful meatballs with aromatic spices and a smooth, herbaceous gravy creating a satisfying plate.

This dish pairs well with a fresh salad or steamed vegetables to add brightness and texture contrast.
