Greek Braised Beans

Our Greek braised beans have a delicious broth with garlic, and cherry tomatoes. Serve the beans with crumbled feta and crusty bread for a cozy, rustic meal or as part of a fantastic Greek meze feast.

Ingredients

Servings
  • ¼ cup extra virgin olive oil
  • cup onion diced
  • 2 garlic minced, cloves
  • cup carrot cut in coins
  • 20 cherry tomato sliced
  • 3 cans butter beans or 1¼ cups dried butter beans soaked overnight and drained
  • 2 cups broth can be chicken or vegetable
  • ¼ cup lemon juice fresh
  • 1 tablespoon lemon zest
  • 1 tablespoon parsley roughly chopped, fresh
  • salt sea salt
  • black pepper freshly ground

Serving

  • ½ cup feta cheese crumbled
  • parsley roughly chopped, fresh
  • chili flakes optional

Instructions

  1. Heat the olive oil in a skillet over medium heat. Saute the carrots with the onions and garlic for 3-4 minutes, until the onions are fragrant.¼ cup extra virgin olive oil ⅔ cup carrots ⅔ cup onions
  2. Add the tomatoes, butter beans, sea salt, pepper, and about two cups of water, and cook on high heat for 20-25 minutes until they have developed a nice brothy sauce.20 cherry tomatoes 3 cans butter beans 2 cups broth sea salt freshly ground pepper
  3. Add the lemon juice, zest and fresh parsley, mix and remove from the heat.¼ cup fresh lemon juice 1 tablespoon lemon zest 1 tablespoon fresh parsley
  4. Divide among the plates and scatter the parsley, and crubled feta cheese.½ cup feta fresh parsley
