Description

This recipe starts by mixing lean ground beef with minced onion, coarsely chopped garlic, an egg, olive oil, red wine vinegar, parsley, thyme, and breadcrumbs mixed with water. The mixture is seasoned and kneaded to bind. Portions of the seasoned meat are shaped into flattened balls to form the burgers. The burgers are arranged in a baking pan surrounded by peeled potato wedges along with green bell peppers, tomato pieces, and thick garlic slices. Drizzled with olive oil and sprinkled with dried oregano, kosher salt, and freshly ground pepper, the pan is partially filled with water for moisture. Baking at 230°C allows the burgers and vegetables to brown and cook fully with flipping for even color.

For The Burger Mixture:

  • 1 Kg / 2 lb + 3 oz ground beef lean
  • ½  large onion minced
  • 3 large garlic coarsely chopped, cloves
  • 1 large egg
  • 6 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 75 grams / 2.6 oz breadcrumb ground
  • 150 ml water
  • a handful of parsley
  • 1 teaspoon thyme (either fresh or dried)

For Garnish:

  • 750 grams / 1 lb + 10 oz potato peeled + cut into wedges
  • 2 green bell pepper cut into bite-sized squares
  • 2 tomato cut into bite-sized squares
  • 10 tablespoons olive oil
  • 1 tablespoon oregano dried
  • 2 garlic cut into thick slices, cloves
  • salt kosher salt, freshly ground pepper
  • black pepper kosher salt, freshly ground pepper

Instructions

For The Burger Mixture:

  1. Place all of the ingredients for the burger mixture in a large mixing bowl and season with kosher salt and ground pepper. Knead for 3-4 minutes until everything combines.
  2. Take bits of the mixture (about 160 grams / 5.6 oz) each and shape into a round ball. Then pat lightly to flatten the top and bottom surface a bit. Place in a large baking pan or a sheet pan.

Garnish & Bake:

  1. Preheat oven to 230°C / 446°F.
  2. Place the potato wedges all around the burgers. Toss the bell pepper, tomato, and garlic pieces here and there. Drizzle the olive oil on top. Season the potatoes with kosher salt and freshly ground pepper.
  3. Sprinkle the dried oregano all over the burgers and the potatoes.
  4. Cover the bottom of the pan with 1 cm / 0.4-inch of water.
  5. Bake for about 50 minutes flipping the burgers at least once. Or until they get a nice brown color on top.
