Greek Chicken and Potatoes

Greek Chicken and Potatoes features bone-in, skin-on chicken thighs and Yukon Gold potatoes roasted with a bright marinade of olive oil, lemon juice, garlic, and oregano. The dish finishes with fresh parsley and lemon wedges for garnish, resulting in tender, flavorful chicken with tender, lemon-scented potatoes, ideal for a straightforward roast packed with Mediterranean flavors.

Description

This recipe pairs chicken thighs with halved Yukon Gold potatoes, both marinated in a mixture of olive oil, fresh lemon juice and zest, garlic, oregano, salt, and black pepper. Roasting at 400°F brings out crisp, richly flavored chicken skin and soft, tender potatoes infused with citrus and herbs. Stirring the ingredients halfway through helps achieve even cooking and browning. The final dish is garnished with fresh parsley and lemon wedges, enhancing its bright, herbal notes. It offers a satisfying main course that combines protein and starch in one pan, making for a practical family meal or dinner with friends.
