  • 1 pound chicken breast cut into 1" pieces, boneless, skinless
  • 1 teaspoon avocado oil
  • 2 tablespoons Greek seasoning
  • 1⅓ cup orzo pasta I recommend Parmesan Orzo, cooked
  • 1⅓ cup cherry tomato sliced
  • 1 cup English cucumber sliced
  • ½ cup red onion diced
  • 1 cup feta cheese
  • 1 cup kalamata olives
  • ¾ cup tzatziki
  • fresh herbs (optional)

Instructions

  1. Add the avocado oil to a skillet over medium-high heat.
  2. Add the chicken and season with the Greek seasoning. Sear the chicken on all sides and cook through. Remove from the skillet.
  3. Divide the chicken, orzo, tomatoes, cucumber, red onion, feta, and kalamata olives between 4 bowls.
  4. Top each bowl with 3 tablespoons of tzatziki and fresh herbs.
