Description
This recipe sautés chicken pieces in avocado oil after seasoning with Greek seasoning, ensuring a flavorful, seared exterior and juicy interior. Ingredients
- 1 pound chicken breast cut into 1" pieces, boneless, skinless
- 1 teaspoon avocado oil
- 2 tablespoons Greek seasoning
- 1⅓ cup orzo pasta I recommend Parmesan Orzo, cooked
- 1⅓ cup cherry tomato sliced
- 1 cup English cucumber sliced
- ½ cup red onion diced
- 1 cup feta cheese
- 1 cup kalamata olives
- ¾ cup tzatziki
- fresh herbs (optional)
Instructions
- Add the avocado oil to a skillet over medium-high heat.
- Add the chicken and season with the Greek seasoning. Sear the chicken on all sides and cook through. Remove from the skillet.
- Divide the chicken, orzo, tomatoes, cucumber, red onion, feta, and kalamata olives between 4 bowls.
- Top each bowl with 3 tablespoons of tzatziki and fresh herbs.
