Description
Greek Chicken Marinade uses plain or Greek-style yogurt as a base, which tenderizes the chicken and provides a creamy coating that helps the other flavors adhere. Chicken breasts or pounded boneless skinless thighs are coated in this mixture and marinated for a minimum of two hours, allowing the flavors to penetrate the meat and the yogurt to begin breaking down proteins for tenderness. Cooking is done by either grilling or using a skillet, heated with a little oil, until the chicken is fully cooked but still juicy.
This marinade is versatile and works well both for whole cuts or cubed chicken, with a note that using thighs and cutting into cubes is recommended if making skewers. This preparation adds flavor and keeps the meat moist during cooking.
Ingredients
- 6 tbsp PLAIN yogurt or Greek-style yogurt
- 4 tbsp olive oil
- 2 tbsp honey runny
- 2 tbsp garlic minced
- 1 ½ tbsp oregano dried
- ½ tbsp thyme dried
- 2 tsp red wine vinegar
- 2 tsp salt
- lemon zest of 1
- black pepper to taste, cracked
- 2 lb chicken breasts or skinless boneless thighs, pounded to 3/4 inch thickness
Instructions
- Combine the yogurt, olive oil, honey, garlic, dried herbs, vinegar, salt, lemon zest and a generous amount of black pepper in a large bowl. Add the chicken pieces and stir until coated. Marinate for at least 2 hours, up to 24 hours.
- To cook the chicken, shake off most of the marinade and either grill or cook in a cast iron skillet with a splash of oil or cooking spray for 15 minutes, or until just cooked through.
