- 1 cup cucumber finely diced
- 1/2 cup tomato finely diced

- 1 tablespoon honey
- 1 tablespoon olive oil
- 2 tablespoons parsley fresh, minced

Instructions
Chicken Skewers Marinade:
- Combine the marinade ingredients in a medium bowl and add chicken chunks to it; toss to coat.
- Marinate for at least 30 minutes or up to 6 hours.
Greek Yogurt Sauce:
- Mix all the ingredients in a medium bowl. Season with salt and pepper to taste. Cover and refrigerate until ready to use, or up to 1-2 days.
- When ready to serve, garnish with chopped dill and a drizzle of olive oil.
