  • 1 pound gigantes beans soaked overnight (can substitute drained canned butter beans, dried
  • 1 onion diced
  • 6 garlic minced, cloves
  • 2 carrot diced
  • 2 celery diced, stalks
  • 1 diced tomatoes 14 oz, canned
  • 2 tbsp. tomato paste
  • 1 teaspoon oregano dried
  • 1 teaspoon thyme dried
  • 1 teaspoon smoked paprika
  • salt to taste
  • black pepper to taste
  • ½ cup olive oil
  • 2 cups vegetable broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Drain the soaked beans and rinse them under cold water. Set aside.
  3. In a large saucepan, heat the olive oil over medium heat. Add the diced onion and sauté until soft and translucent, about 5-7 minutes.
  4. Add the minced garlic, diced carrots, and diced celery to the saucepan. Cook for another 5-7 minutes, or until the vegetables are tender.
  5. Stir in the canned tomatoes, tomato paste, oregano, thyme, smoked paprika, salt, and pepper. Cook for a few more minutes until everything is well combined.
  6. Add the drained Gigantes beans and vegetable broth to the saucepan. Stir everything together.
  7. Transfer the mixture to a large baking dish, making sure that the beans are submerged in the liquid.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 1 1/2 to 2 hours, or until the beans are tender and the sauce is thick and bubbly.
