Greek Gyro Meat (made in a loaf pan)

This easy recipe to make traditional Greek Gyro in a loaf pan is the perfect recipe to meal prep with plus it's incredibly versatile.

Ingredients

Servings
  • 2 lbs ground beef lean
  • 2 tsp garlic powder
  • 3 tsp salt
  • 1 tsp black pepper
  • 1 tbsp oregano dried
  • 2 tsp cumin
  • 4 tbsp olive oil
  • 1 tbsp red wine vinegar

Gyros toppings

  • 2-4 Pita bread pockets
  • Gyro Meat sliced
  • red onion ¼, chopped
  • tomato 1, chopped
  • 1/2 cup feta cheese crumbled
  • tzatziki (make our tzatziki)
  • 1-2 cups French Fries 1-2 cups, cooked, optional

Instructions

Make the gyro meat

  1. Preheat the oven to 350F.
  2. Add all gyro meat ingredients to the bowl of a stand mixer. Using the paddle attachment, mix the meat mixture together on medium speed for about 5-7 minutes or until the mixture is smooth and tacky / pasty.
  3. Place the meat into the loaf pan and use a spatula or flipper to gently press down on the meat, trying to get the air pockets out. Place the loaf pan onto a baking sheet to prevent from any splatter in the oven.
  4. Bake for 60 minutes, until gyro meat is no longer pink in the center. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove from the oven and allow to cool for 15 minutes. Remove any excess grease into your compost lined with paper towel.
  5. Thinly slice the meat and serve immediately or if desired, saute in a hot pan with a bit of oil until golden brown and crispy.

Make gyros

  1. If using, cook the fries according to package directions. When the fries are done cooking, toss with a drizzle of olive oil and big pinches of garlic powder, salt, pepper and dried oregano. Set aside.
  2. Assemble the gyros - **if using a small pita snip the top and stuff / if using a larger pita cut in half and stuff**
  3. Fill the pita pockets with tzatziki, fries, gyro meat, onions, tomatoes and feta cheese.
