Greek Lettuce Wraps

Greek Lettuce Wraps combine seasoned ground turkey cooked with garlic and oregano, served crisp in fresh lettuce leaves. The wraps are topped with diced cucumber, tomatoes, and a rich, creamy yogurt-feta-mint dressing blending olive oil, lemon juice, and vinegar. These wraps offer a fresh, tangy flavor with a mix of tender cooked meat and crisp, cool vegetable toppings, making them a light but satisfying meal or appetizer.

Description

This recipe prepares a tangy dressing by pureeing plain Greek yogurt, crumbled feta, fresh mint, olive oil, lemon juice, red wine vinegar, and seasonings until smooth and thick. The ground turkey is cooked with salt, pepper, fresh garlic, dried oregano, and brightened with lemon juice and vinegar for flavor. Once cooked through and drained, the meat is spooned into Bibb or romaine lettuce leaves. Chopped cucumber and diced tomatoes are added on top along with a drizzle or dollop of the creamy dressing.

The contrast between warm, well-seasoned ground turkey and crisp, cool vegetables wrapped in tender lettuce creates a refreshing bite perfect for light lunches or casual dinners. The herbaceous dressing with feta and mint complements the meat and adds a Mediterranean flair to these easy-to-assemble wraps.

  • ¼ cup feta cheese crumbled
  • 10 to 12 to 12 mint leaf fresh
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice fresh
  • 1 tablespoon red wine vinegar or white wine vinegar

  • ¼ teaspoon salt
  • Pinch black pepper

Lettuce Wraps:

  • 1 ½ pounds ground turkey or chicken, lean
  • salt

  • 1 teaspoon oregano dried
  • 2 tablespoons lemon juice fresh
  • 2 tablespoons red wine vinegar
  • lettuce Bibb or romaine, leaves
  • cucumber chopped

Instructions

  1. For the dressing: add all the dressing ingredients to a blender and puree until smooth. It will be thick. For thinner dressing, add water or olive oil a little at a time until desired consistency. The dressing can be made several days in advance.
  2. For the lettuce wraps: in a 12-inch nonstick skillet over medium heat, add the ground turkey or chicken and season lightly with salt and pepper. Cook until no longer pink, breaking the meat into small pieces as it cooks. Drain excess grease.
  3. Stir in the garlic, oregano, lemon juice and red wine vinegar. Cook for 2-3 minutes. Season to taste with additional salt and pepper, if needed. Remove from the heat.
  4. Serve the ground turkey in lettuce leaves/cups topped with chopped cucumbers, tomatoes, and a spoonful of dressing.
