This recipe starts by cooking pasta until al dente and cooling it to prevent overcooking when mixed with other ingredients. Ingredients

  • 16 oz rotini pasta penne or bowtie will work too
  • 1 cup English cucumber diced
  • 1 pint grape tomatoes halved
  • 1 bell pepper red or green will work too, orange
  • 1/2 cup olive sliced, pitted
  • 1/2 cup feta cheese
  • 1/4 cup red onion diced
  • 1 cup Vinaigrette Dressing greek

Instructions

  1. Cook pasta until al dente. Rinse under cold water and cool completely.
  2. In a large bowl combine pasta, and all the other ingredients
  3. Stir to combine.
  4. Store, covered, in the refrigerator for atleast 2 hours. Serve.
  5. Notes: I like to stir in about 1/4 cup extra dressing right before I serve it and sprinkle with more feta just so it looks fancier at a potluck. Enjoy!
