Greek Pasta Salad
Description
This recipe starts by cooking pasta until al dente and cooling it to prevent overcooking when mixed with other ingredients. The salad incorporates fresh vegetables like cucumber and tomatoes for crispness and a sweet-tart balance, while bell pepper adds mild crunch and color. Olives contribute a salty, briny flavor, complemented by the creamy, crumbly feta cheese and sharp notes of diced red onion.
The salad is dressed with a Greek vinaigrette, which brings acidity and herbs into the mix, tying the ingredients together. Letting the salad chill for at least two hours allows the flavors to meld while keeping the vegetables crisp. Ingredients
- 16 oz rotini pasta penne or bowtie will work too
- 1 cup English cucumber diced
- 1 pint grape tomatoes halved
- 1 bell pepper red or green will work too, orange
- 1/2 cup olive sliced, pitted
- 1/2 cup feta cheese
- 1/4 cup red onion diced
- 1 cup Vinaigrette Dressing greek
Instructions
- Cook pasta until al dente. Rinse under cold water and cool completely.
- In a large bowl combine pasta, and all the other ingredients
- Stir to combine.
- Store, covered, in the refrigerator for atleast 2 hours. Serve.
- Notes: I like to stir in about 1/4 cup extra dressing right before I serve it and sprinkle with more feta just so it looks fancier at a potluck. Enjoy!
