Greek Pork Tenderloin
Description
This recipe calls for pork tenderloin, a lean and tender cut, rubbed with a blend of Greek seasoning, salt, and olive oil. After trimming silver skin and fat, the pork is coated thoroughly and baked at 400°F (205°C) until reaching an internal temperature of 145°F (63°C). Resting the meat before slicing allows juices to redistribute, ensuring moist medallions.
The Greek seasoning provides a balance of herbs and spices characteristic of Mediterranean flavor, complementing the pork's natural taste. Baking at a relatively high temperature creates a lightly browned exterior while preserving tenderness inside.
This roasted pork is versatile, suitable as a main entrée paired with vegetables, rice, or potatoes. The recipe notes caution against confusing tenderloin with pork loin as cooking times differ, and suggests checking premade seasoning salt content before additional salting.
