Greek Salad
Description
The Greek Salad recipe assembles crisp chunks of cucumber, sweet tomatoes, crunchy bell pepper, and sharp red onion alongside briny kalamata olives for a mix of textures and flavors. Feta cheese, both crumbled and cubed, adds creamy, salty accents throughout. The dressing is a bright, tangy mix of garlic, red wine vinegar, olive oil, and lemon juice, seasoned with oregano, black pepper, and a touch of sugar for balance.
This salad is best served immediately after tossing to preserve the crunch of the vegetables. It pairs well with grilled meats or as part of a light meal. Using cocktail tomatoes adds concentrated flavor, and fresh basil or dill can be added for extra aroma if available.
For leftovers, store the salad in an airtight container refrigerated for up to two days; the flavors meld and vegetables soften slightly without becoming mushy. Adding feta brine can adjust seasoning if the dressing tastes bland.
Ingredients
- 1 English cucumber cut in cubes
- 1 small red onion roughly chopped
- 1 green bell pepper chopped
- 2 cup tomato cut in half or quarters, cocktail
- 1½ cup feta cheese crumbled or cubed
- ¾ cup kalamata olives pitted
Dressing
- 2 cloves garlic minced
- ¼ cup red wine vinegar
- ¼ cup olive oil
- 2 tablespoon lemon juice freshly squeezed
- 1 tablespoon oregano dried
- ½ teaspoon black pepper ground
- 1½ teaspoon sugar
Instructions
- Prepare the dressing: Add all the dressing ingredients to a small bowl and whisk well. Alternatively you can place them all in a blender and blend until for about 30 seconds until well combined. Another option is to place all the ingredients in a jar and shake well.
- Toss everything together: Add the cucumber, tomatoes, bell pepper, onion, olives and feta cheese to a large bowl and pour the dressing over. Toss everything well together and serve immediately.
Notes
- Use both cubed and crumbled feta to get varied texture and flavor throughout the salad.
- Kalamata olives provide a characteristic salty, meaty bite and are preferred for an authentic taste.
- Choose cocktail tomatoes for their intense flavor to enhance the salad's freshness.
- If needed, adjust seasoning by adding feta brine to the dressing.
- Store leftovers in an airtight container for up to two days; flavors develop further with time.
