Warm, soft pita bread topped with creamy hummus, romaine lettuce, grape tomatoes, cucumber, red onion, feta cheese, and homemade tzatziki sauce.

Ingredients
- (4) round Round Pita Bread or Naan Bread
- 1 cup hummus (your favorite flavor)
- 10 ounces grape tomatoes (sliced in half)
- 2 Tablespoons extra virgin olive oil
- 2 cups romaine lettuce (chopped)
- 1 large hot house cucumber (sliced and halved)
- 1/4 small red onion (sliced)
- 1/2 cup feta cheese (crumbled)
Homemade Tzatziki Sauce:
- 1 cup plain greek yogurt
- 1 Tablespoon extra virgin olive oil
- 2 teaspoons fresh lemon juice
- 2 teaspoons red wine vinegar
- 1 teaspoon salt
- 2 teaspoons fresh dill (or 1/2 teaspoon Dried Dil)
- 2 garlic cloves (minced)
- 1/2 cup grated cucumber (squeeze in paper towel to drain off some water)
Instructions
- Preheat oven to 400 degrees or set on broil. Place pita or naan bread on baking sheet. Bake for about 5 minutes or until warmed.
- Spread hummus on each pita. In a small bowl, add grape tomatoes, olive oil, and a few pinches of salt. Let marinate for several minutes.
- Top pita bread with romaine lettuce, marinated tomatoes, cucumber, red onion, and feta cheese.
To make Tzatziki Sauce:
- Stir together yogurt, olive oil, lemon juice, vinegar, salt, dill, and garlic. Stir in grated cucumber and taste for seasonings. **Squeeze the cucumber to remove excess water before adding to rest of ingredients.
- Place dollops of tzatziki sauce all over the pita. Serve immediately.
