Greek Salmon Salad

Greek Salmon Salad is made with juicy salmon fillets, crunchy vegetables, and creamy feta, all coated in a homemade lemon mint vinaigrette.

Ingredients

Servings

For the salmon:

  • 1 lb Salmon fillet divided into 4 equal pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • kosher salt and black pepper to taste
  • 1 1/2 teaspoon dried oregano

Salad:

  • 8 oz romaine lettuce chopped
  • 10 oz Cherry or grape tomatoes sliced in half or quatered - depends how big they are
  • 1 red bell cored and sliced into rounds - you can use any color
  • 1 English cucumber sliced into rounds
  • 1 small red onion thinly sliced
  • 1/2 cup kalamata olives pitted and sliced in half
  • 1 cup Greek Feta crumbled

Lemon vinaigrette

  • 1/2 cup extra virgin olive oil use high-quality oil
  • 1 large lemon
  • 1 teaspoon red wine vinegar
  • 1 tablespoon honey or maple syrup
  • 3 garlic cloves minced
  • 15 fresh mint leaves no stems - optional
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sweet paprika

Instructions

  1. Preheat oven to 425 degrees F and position a rack in the middle of the oven.
  2. Place the salmon on a cutting board, pat dry it with paper towels o both sides. After that, season it with kosher salt, pepper, garlic, and dried oregano.
  3. Arrange the fish on a lightly oiled baking pan and brush the top with extra virgin olive oil. Bake the salmon in the heated oven for 8 to 12 minutes, or until it's done.

Salad:

  1. While the salmon cooks, prepare the ingredients for the salad, wash, chop, and slice as needed.
  2. Add all the ingredients, except feta, to a large bowl.

Salad dressing:

  1. In the bowl of a food processor fitted with the blade attachment, add the vinaigrette ingredients. Blend until smooth and season with salt and pepper to taste.
  2. Pour about half of the vinaigrette over the salad and toss to combine. After that, add the feta cheese and toss.
  3. Next, add the salmon and drizzle the remaining vinaigrette on top of it. Serve and enjoy.
