Greek Salmon with Lemon and Dill Recipe
Description
Greek Salmon with Lemon and Dill Recipe highlights the freshness of salmon fillets complemented by a marinade made from extra virgin olive oil, freshly chopped dill and oregano, black pepper, and lemon zest and juice. The marinating step allows the herbs and citrus to penetrate the fish, enhancing its natural flavors. After marination, the salmon is seasoned with salt and pan-seared skin side down (or presentation side down) without disturbance to form a subtle crust. Turning the salmon carefully ensures even cooking for about six minutes total, preserving a tender, juicy interior.
The flavor profile is herbal, citrusy, and mildly peppery, with the olive oil and herbs enriching the salmon’s natural taste. The cooking method produces a fish with a lightly browned exterior and moist flesh. Typically served as a main course, it can pair well with fresh vegetables, light salads, or simple grains to complement its bright, savory taste.
In this recipe, it’s noted that dried herbs can be substituted by using smaller amounts and that skin-off fillets are preferred because the marinade prevents the skin from crisping, which some find undesirable. Marinating time ranges from 30 minutes to 3 hours in the refrigerator, allowing flexible preparation. This helps to build flavor without over-softening the fish.
Ingredients
- 3 tablespoon extra virgin olive oil
- 1 tablespoon dill see note 1, fresh
- 1 tablespoon oregano see note 1, fresh
- ½ teaspoon black pepper
- 1 lemon
- 4 salmon fillet see note 2, fresh
- ½ teaspoon salt
Instructions
- Mix the extra virgin olive together with the black pepper, the chopped fresh dill, and fresh oregano together in a non-metallic bowl. Stir well then add in the zest and juice of the lemon.
- Place the salmon fillets into the marinade and turn them to coat. Set them aside in the refrigerator for at least 30 minutes and up to 3 hours.
- Once the salmon has marinated, place a heavy paced frying pan or skillet over medium-high heat and allow it to get hot.
- Season the salmon fillets with the salt and then place the salmon presentation side down into the pan.
- Cook undisturbed for 3 minutes. Carefully flip the salmon and cook for a further 3 minutes.
Notes
- Dried herbs can replace fresh dill and oregano; use 2 teaspoons each instead of 1 tablespoon.
- Skin-off salmon fillets are recommended to avoid soggy skin, as the marinade inhibits crisping.
