- 3-4 potato Yukon gold variety

- 2-3 lemon plural

- 1 lb Greek sausages or Italian, Bratwurts, chorizo
- 3 red longhorn peppers or red bell peppers
- 2 onion or one large, small

Instructions
- Preheat the oven to 220°C / 428°F. Cut the potatoes into wedges, peppers and onions into thick slices. Cut the sausages into large pieces.
- Spread the potatoes in a sheet pan, season them with sea salt, dried oregano and pepper, and drizzle the olive oil. Pour lemon juice from one lemon all over the potatoes. Bake for about 30 minutes or until potatoes are almost done.
- Add the sausage, sliced red peppers, and onions to the sheet pan. Toss all together. Pour more lemon juice and add some lemon wedges around if you like. Continue baking for another 20 minutes or until the potatoes are soft with golden edges and the sausages are fully cooked. Serve with a sprinkle of chili flakes and more lemon wedges to go around the table.
