The Tacos:

  • 1 ¼ pounds Shrimp peeled & deveined, large 16-20 count Gulf
  • 2 teaspoons olive oil
  • ½ teaspoon oregano ground
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper ground
  • 8 white corn tortillas

The Slaw:

  • 1 ⅔ cups broccoli such as Trader Joe's, slaw
  • 1 ⅔ cups carrot such as Trader Joe's, slaw
  • 1 cup cucumber English, diced
  • 2 green onions thinly sliced
  • 3 tablespoons parsley flat-leaf, minced
  • cup Greek yogurt plain, nonfat
  • 1 tablespoon lemon juice fresh
  • 2 tablespoons milk nonfat
  • ½ teaspoon oregano ground
  • ½ teaspoon honey or agave nectar
  • ¼ teaspoon garlic powder
  • teaspoon salt
  • ¼ cup feta cheese crumbled, + 2 tablespoons

Instructions

The Tacos:

  1. In a medium bowl, toss the shrimp with the olive oil, oregano, salt and pepper.
  2. Heat a large nonstick skillet over medium-high heat.
  3. Add the shrimp and cook until just barely cooked through, 1 to 2 minutes per side.
  4. Wrap the corn tortillas in a paper towel and microwave on HIGH for 30 seconds to soften the tortillas.
  5. Stuff each tortilla with 3 shrimp, ⅓ cup slaw and 2 teaspoons of the leftover dressing (see slaw).

The Slaw:

  1. In a medium bowl, toss together the broccoli carrot slaw, cucumber, green onions and parsley.
  2. In a small bowl, whisk together the yogurt, lemon juice, milk, oregano, honey (or agave nectar), garlic powder and salt.
  3. Pour half of the dressing onto the broccoli slaw mixture and toss to coat. Toss with the feta cheese.
